Granola is a great way to incorporate grains and healthy fats into your diet! Our apricot and cranberry granola is filled with whole grain cinnamon oats, chewy apricots and dried cranberries and binded together with coconut oil, egg whites and honey. This granola is the perfect accompaniment to our Wild Berry Collagen Oats or to just snack on throughout the day!
Makes 4 Cups Gluten-Free, Dairy-Free
What You'll Need:
1 1/2 Cups Rolled Oats
1 Cup Walnuts
3/4 Cup Dried Apricots, halved
3/4 Cup Dried Cranberries
2 tsp. Kosher Salt
1 tsp. Cinnamon
1/4 Cup Coconut Oil, Melted
1 Egg White
1 tsp. Vanilla Extract
1/2 Cup Honey
Start by placing all dry ingredients into the food processor.
Pulse until the mixture is in bite size chunks.
Pulse in the wet ingredients until fully mixed through.
Evenly spread the granola mixture onto the parchment lined baking sheet and pack tightly.
Bake at 350 for 20-25 min until golden brown. Let the granola sit until completely cooled off.
Break the granola off of the parchment into bite sized pieces. Store in a an air tight container and enjoy for up to one month.
Preheat oven to 350.
Place all dry ingredients into food processor, quickly pulse until the nuts and dried fruit is pulsed into small pieces. Do not over pulse.
Place all of wet ingredients into a separate bowl (coconut oil, egg white, honey & vanilla).
Place wet ingredients into the food processor and quickly blend until mixed through.
Line a baking sheet with parchment paper and gently fold the granola onto the tray.
Pack the granola tightly together so there is no empty space on the tray.
Bake for 20-25 minutes, turning the baking sheet halfway through.
When the granola is finished baking, take it out and let it cool. Do not touch it during this process, this is where the granola forms!
After the granola is cooled, gently break off pieces into bite size chunks.
Store in a air tight container for up to one month.
