Baked Blueberry Oatmeal

Baked Blueberry Oatmeal

What You'll Need:

  • 2 cups rolled quick oats
  • 2 tbsp melted coconut oil
  • 1 egg
  • 3 cups almond milk
  • 1/4 cup brown sugar
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 cup blueberries

Directions:

  1. Preheat your oven to 350.
  2. Place your melted coconut oil, egg and vanilla into a bowl and mix well. 
  3. Add your dry ingredients; rolled oats, brown sugar, cinnamon, baking powder, kosher salt and blueberries.
  4. Place your mixture into a prepared, greased baking pan.
  5. Let it side for 5-10 minutes to thicken up. 
  6. Bake for 30-35 min until the top is golden brown.
