Baked Blueberry Oatmeal
What You'll Need:
- 2 cups rolled quick oats
- 2 tbsp melted coconut oil
- 1 egg
- 3 cups almond milk
- 1/4 cup brown sugar
- 2 tsp vanilla
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp kosher salt
- 1 cup blueberries
Directions:
- Preheat your oven to 350.
- Place your melted coconut oil, egg and vanilla into a bowl and mix well.
- Add your dry ingredients; rolled oats, brown sugar, cinnamon, baking powder, kosher salt and blueberries.
- Place your mixture into a prepared, greased baking pan.
- Let it side for 5-10 minutes to thicken up.
- Bake for 30-35 min until the top is golden brown.
